Like I’ve said before, when I have no idea what I’m making, my food turns out tasting the best. I made this dish for breakfast last week. It was the end of the week meaning there was very few groceries left in the fridge and pantry. We needed a quick breakfast before going grocery shopping so I pulled out whatever leftover vegetables I had and made a very tasty and filling breakfast out of them.
I simply washed all my veggies, chopped them up, seasoned them, sautéed them in some coconut oil and topped them off with a few beaten eggs. That sounds like a breakfast skillet right? Well when I asked my husband what he would call it, he said; “A delicious mess!” So that’ll be the title of this dish.
Honestly it really was delicious. I will definitely make it again. In fact I’m planning on making it tomorrow for breakfast, but with regular white potatoes this time. We loved it with the sweet potatoes but I think it’ll taste better with white potatoes. So feel free to use either type to make this dish work for you.
