Coconut Date Bites
Want a taste of heaven in a matter of minutes? These coconut date bites are the quickest and easiest treat to make and take just 10 minutes. I make these often and keep them in the fridge or bring some to work as a quick source of energy when I need it. These little date and coconut bites are packed with complex carbohydrates, fiber and healthy fats to satisfy your sweet tooth and help keep you full until your next meal.
You literally need 3 ingredients to make these. And the best part is that you don’t have to turn on your oven or make a huge mess. You can just eat them raw as is. Can’t get any easier or healthier than this right? That is what I call real food and clean eating. Pure, raw, delicious energy!
Dates are an awesome fruit that are full of health benefits that not too many people take advantage of. They are packed with vitamins like A, K, B- vitamins, iron and potassium. They are an incredibly tasty fruit that can sweeten up any dessert on their own without the assistance of any other type of sweetener. I guarantee you will not find another snack as tasty with this amount of ingredients.
Blend the dates and cardamom in a food processor. Add a few drops of water if necessary
Shape them into small bite size balls and dip them in the shredded coconut
Place on a tray lined with parchment paper
