Mediterranean pasta w/tahini/sundried tomato dressing is one of tastiest pasta dishes I’ve made. Just like everyone else, I love pasta. Whether it’s alfredo, spaghetti with meatballs, pesto pasta you name it. This time I was in the mood for mediterranean flavors and since pasta is one of the fastest things to cook I decided to use that as my base and make a sundried tomato/tahini dressing to flavor the dish. It turned out amazing, so good that I decided to make a recipe for it. I’ve never made this dish before so I’m glad I remembered all the measurements of the ingredients.
You can definitely use whatever veggies you want or have available in this mediterranean pasta dish, and you can always add some chicken which I actually think would be a perfect addition. To give this pasta dish even more of a mediterranean taste and flavor, try adding some kalamata olives and a little feta cheese. I enjoyed this dish warm, but if or when I make it in the summer I will be serving it cold.
Tahini is one of my favorite type of plant based butters. It was always available at my house growing up, and I’ve kept it that way ever since. One of my favorite ways to eat tahini is by mixing a little bit of date syrup with it and dipping pita bread into the delicious mix. Every Chaldean out there would know what I’m talking about! I dare you to try it. It’s addicting.
For those who don’t know what tahini is or have never tried it, it’s a seed butter made from sesame seeds. It’s a lot thinner than other nut/seed butters and has a bitter and nutty taste to it. It’s used a lot in mediterranean foods and desserts. Sesame seeds are high in many nutrients and minerals such as; manganese, copper, magnesium, iron, zinc, calcium and more. All which support your health in many ways, and help with arthritis, colon cancer, migraines and even PMS!
