I can’t tell you how much I’ve fallen in love with this quinoa apple breakfast bowl. I love everything that has to do with fall, anywhere from clothes, colors on the trees and of course the foods! And this quinoa bowl is definitely fall inspired. It also has become a staple in my house. Of course this meal can be enjoyed anytime of year too.

This quinoa apple breakfast bowl is also a great alternative to oatmeal. I can eat oatmeal for months in a row, but sometimes it’s nice to change things up. The thing I love about breakfasts like this one is that you can cook enough quinoa to last you a couple or even a few days. All you have to do in the morning is dice the apples, and add cinnamon, coconut sugar and pecans, warm it up a little bit and you have yourself an amazing breakfast. A breakfast that’s filled with healthy carbs, protein and fats. I really enjoy it with a good cup of coffee if I’m having it for breakfast (You can absolutely enjoy this quinoa bowl any time of day!)

Another great thing about this quinoa apple breakfast bowl is that you can top it off with different nuts or even nut butters (I’ve been loving it with almond butter) or even different fruits if you like.   1. Cook the quinoa as instructed on the bag
  2. Dice the apple and mix it in with the quinoa
  3. Place in 2 bowls and add on the cinnamon, coconut sugar and the pecans and enjoy!
