Quinoa veggie stir fry is one of my go to meals. In just under 30 minutes you can have a nutritious, filling and very satisfying meal. This quinoa veggie stir fry is very versatile. You can literally use any veggies you have in the fridge. That’s one of the things I absolutely love about stir fry’s. There are no “must” use vegetables and no “must” use seasoning.
I make this meal quite often using different types of vegetables and seasonings, to change up the flavor a little bit. Plus it’s so quick and easy to make, that you have no excuse not to cook!
Honestly it can be eaten any time of day, whether it’s for breakfast, lunch or dinner. I typically add an egg or beans to this meal but I didn’t have either at home available. So if you want a little extra protein feel free to add eggs, beans or some meat.
Quinoa is my favorite grain to use, because of how fast it cooks. It really only takes 15 -20 minutes to cook, and while it’s cooking you can prepare your veggies and sauté them. Other reasons why I love quinoa and cook it very often is that it’s high in protein, low in glycemic index which means it enters the blood stream at a slow rate so it doesn’t spike up your blood sugar, so you’ll stay full longer. It’s also wheat and gluten free, which makes it a great alternative to those who have those types of sensitivities. Another benefit of quinoa is that it’s very high in vitamins and minerals, so there’s many reasons why you should consume it.
Start by cooking 1 cup of quinoa in 2 cups water as instructed on package
Chop your veggies and throw in a pan with olive oil.
Sautee for about 10-15 minutes and add the seasonings.
Once quinoa and veggies are cooked, you can either mix them together or place them separate on your plate.
Top the meal off with an avocado.
