Super smoothie Bowl

I know this sounds weird but I don’t like to drink my smoothies. I’d rather eat them. I don’t like when they’re too runny and you have to drink them with a straw. That’s why I always make them thick so they have a better consistency You can top them off with whatever you like and you get to eat them with a spoon! To me it feels more like a meal that way and therefor feels more satisfying.

I have made endless amounts of smoothie mixtures. My favorite has to be blueberry/banana and mango/banana. Oh and of course the classic strawberry/banana! I can’t seem to pick one. They’re all delicious in their own way. They’re a perfect summer breakfast but honestly you can eat them anytime of year or day. I noticed that I eat them mostly for breakfast during summer season and as a snack or dessert during the cooler months.

I love how versatile smoothie bowls are. You can mix any fruits you like and add any toppings you like. I almost always add granola to mine. The only times I don’t is when I’m out of granola.

All you need for the base is frozen bananas, frozen blueberries and a little bit of water. I prefer coconut water. Bananas are high in fiber, potassium and aid in digestion  they even produce digestive enzymes so your body can absorb nutrients better. The riper the banana the easier it is to digest and the sweeter it is. Bananas don’t really have a “growing” season so they are available all year round and they are super cheap! If there’s one fruit I eat every single day it has to be bananas. At least two a day. I love the sweetness and creaminess they add to smoothies (and other sweets). Blueberries are high in antioxidants which we all know are good in fighting aging and cancer.

Instructions
  1. First make your super quick granola by adding dates, coconut and rolled oats to a blender
  2. Blend until it resembles granola
  3. Add in the sunflower seeds and cacao nibs and mix
  4. Place your fruits into a blender and mix with a little bit of water to get the blender going
  5. Now pour the blueberry/banana base into two serving bowls. Add your granola to each bowl and enjoy!
