Breakfast Skillet – A Delicious Mess

Like I’ve said before, when I have no idea what I’m making, my food turns out tasting the best. I made this dish for breakfast last week. It was the end of the week meaning there was very few groceries left in the fridge and pantry. We needed a quick breakfast before going grocery shopping so I pulled out whatever leftover vegetables I had and made a very tasty and filling breakfast out of them.

I simply washed all my veggies, chopped them up, seasoned them, sautéed them in some coconut oil and topped them off with a few beaten eggs. That sounds like a breakfast skillet right? Well when I asked my husband what he would call it, he said; “A delicious mess!” So that’ll be the title of this dish.

Honestly it really was delicious. I will definitely make it again. In fact I’m planning on making it tomorrow for breakfast, but with regular white potatoes this time. We loved it with the sweet potatoes but I think it’ll taste better with white potatoes. So feel free to use either type to make this dish work for you.

  1. Start by heating the oil in a pan or skillet on medium heat
  2. First add the potato slices and let sautée for 5 minutes with lid on
  3. Add the rest of the vegetables, sautée for another 10 minutes with lid on
  4. Add all the spices and stir
  5. Beat your eggs, pour on top of the veggies, place lid on and let cook for about 5 minutes
