Nachos – Double Layer Quick Vegetarian Nachos

Nachos are huge favorite in my house. They’re delicious, satisfying, and easy to make. You really can’t go wrong with these double layer vegetarian nachos on any day of the week. I love making them when we’re just hanging out in the house watching movies and relaxing. These nachos are vegetarian but you can definitely add chicken or ground beef if you desire.

I made my own refried beans and salsa which is are super easy to make. Head over to my previous recipe if you’d like to know how to  make your own beans. That recipe will really show you how to degas beans so you can eat them with no issues.

If you have the refried beans and salsa made the day before, then these double layer nachos will only take you a few minutes to make. It’s just a matter of layering the ingredients and warming them up in the oven to let the cheese melt a little bit. It’ll make the house smell amazing. If you end up with extra beans and salsa then a perfect way to use them is by making; Homemade “Chipotle” BowlAgain, this will save you lots of time because all you will have to cook is the cilantro lime rice and add an avocado on top. Speaking of avocados; you can totally slice up an avocado and top off the nachos with it. I do that quite often.

 As an extra bonus these nachos are healthy, considering that we’re only using as clean ingredients as possible, especially when you make your own refried beans and salsa. You can really control the amount of sodium and saturated fats. Make sure that your chips and cheese contain as few ingredients as possible and you’ll find that these nachos aren’t as guilty as they look!

  1. Chop all ingredients, add the seasoning and mix.

  1. Place beans and seasonings in a blender and mix with a little bit of water until you reach desired consistency.

  1. Cover the plate with chips close together.
  2. Add half the beans all over the chips.
  3. Add half the salsa on top of the beans.
  4. Add half the cheese on top of salsa.
  5. Repeat all 4 steps and bake for 15 minutes at 400°.
